We have Tg on the Saturday after & this year we’re bringing an unTurkey to a potluck Tg friends are hosting. We’re making it today. Wish us luck. Did you ever try Miyoko’s pre-baking method? I’m wondering if we should bake it in a curved container so that the shape is better for stuffing.

Never did that method, actually, and never found it necessary. It turns out perfectly without. A curved container would be worth trying, though.

Thanks. We tried it & the gluten just sort of came undone with the gravity so we’ve rolled it out & it’s in the oven now. Apparently Miyoko has further refinements/differences from the old recipe that can be found here:

She adds garbanzo flour to the gluten flour & there are a lot more spices in the mix. I wondered why no sage so I added some. Now I’ll go back & add the others to use in the broth & the basting.

She also makes the gluten into a ball. Too late for that this year. OH well.
