redwagon, you want to use 8 cups VWGF, 6 cups water, and 1/3 Nutritional Yeast Mix, like it says in the Great Gluten Turkey recipe.

The other recipe (Homemade Gluten) is a guide for making gluten, and is there for extra information. Ignore the quantities in "Homemade Gluten".

Hi. I am so grateful to come across this site just in time for the holidays. I definitely be trying the UnTurkey out this year. However, I am a little confused as to the amount of Vital Wheat Gluten Flour to use. Looking at the Gluten recipe post it says to use 2.5 cups VWGF and 2 cups water, but on the main recipe page it says 8 cups VWGF, 6 cups water, and 1/3 Nutritional Yeast Mix. If anyone could provide clarification, that would help tremendously. Thanks!

oh wait a sec. i am a dunce. for some reason i took simmer to mean, like, in the oven. i know, i’m a dunce. doesn’t even make sense. i panicked.

SO:

1. bake half an hour
2. simmer an hour, in a pot of water.
3. unroll and stuff and cover with skin.
4. bake 1.25 hours.
5. eat.

question! i'm trying to synthesize the original unturkey recipe with the updates from Miyoko. i understand that the pre-baking eliminates the need for the cheesecloth/boiling step, but i'd like some clarification just to make sure i don't do it wrong. i'm just curious if there is any need to boil it at all...they way i'm interpreting her directions is just to bake for half an hour, simmer for an hour, then add stuffing and bake again as directed...

???

thanks :)
